PW's (Insanely good) Onion & Blue Cheese Sauce

Are you familiar with Ree aka "The Pioneer Woman"? She writes a fantastic Blog with numerous subsections. It's actually many blogs in one and although I love to spend time reading everything, her "Confessions" and "Cooking" sections are probably my favorites. But wait, I really love the "Photography" and "Home and Garden" sections and shoot, basically, the whole darn thing. Her posts on how she met and married Marlboro Man had me laughing out loud often (check out "Black Heels & Tractor Wheels" for fascinating reading). Take a stroll on over there when you get a chance but be prepared to lose track of large chunks of time.

Meanwhile, you have absolutely got to try this recipe! Please??? For your own sake?  It's so easy to make and it tastes........wow, it's difficult to find an adjective to do it justice - it's simply that delicious. I do not like Blue Cheese at all but I love this sauce! It would be great on Chicken, Potatoes, your finger - lol. See her entire post and step-by-step photos at:

Pioneer Woman's Grilled Ribeye with Onion-Blue Cheese Sauce

2 ribeye steaks
2 tablespoons butter
Salt
Pepper
4 tablespoons butter
1 very large yellow onion
3/4 to 1 cup heavy cream
1/2 cup crumbled blue cheese

Salt and pepper both sides of the steaks. Grill in 2 tablespoons butter until medium rare.


Saute onions in 4 tablespoons butter over high heat. Cook for 5 to 7 minutes, or until dark and caramelized. Reduce heat to simmer and pour in cream. Cook for 3 to 5 minutes, or until reduced by half. Stir in blue cheese until melted. Serve steaks on generous portion of sauce. Faint.


Repeat as often as needed.

    That sauce looks so easy! I like recipes that use just a few ingredients.
